Spicy Rice Noodles & Broccolini
This seemed to be a huge hit on my Instagram feed so I wanted to share the recipe for these spicy noodles & broccolini with you! (Stay tuned I’ll be sharing the recipe for the Salmon later this week). Noodles are one of my favorite things to eat and luckily for me they are popular in many types of cuisines. I’ll always love my traditional pasta dishes but Asian noodles are also where its at! The noodles in this recipe are SO easy yet pack a punch in flavour. And the best part is that you can serve them with a variety of protein and veggies. This time I combined it with Sesame Crusted Salmon and broccolini.
Ingredients to make spicy noodles:
1/2 package of rice noodles
1 tablespoon Sriracha
1 tablespoon soya sauce
1 tablespoon sesame oil
1/2 teaspoon freshly grated ginger
1/2 teaspoon diced garlic
2 sprigs green onion (diced)
1 bunch of broccolini
2 eggs whisked

How to make spicy noodles:
Boil water in a kettle. Place noodles in a bowl big enough for them to be covered with water once it boils. Pour boiling water over noodles and cover with a lid or plate for 6 minutes. Drain and run under cold water. Set aside.
Steam broccolini in a rice cooker or in a pan with water. Set aside.
Heat up a wok. Add oil and on low heat saute garlic and ginger for a minute. Add whisked eggs and make a rough scramble. Once almost cooked add the rice noodles and stir. Add all of the liquid ingredients + green onion until noodles are coated. Add broccolini to the mix.
Make the Sesame Crusted Salmon and serve on top of noodles! It is that easy!
