Sheet Pan Dinner: Shrimp & Veggies

Shrimp is definitely at the top of my ‘favourite seafood to cook’ list! It is so versatile and can be incorporated into dishes throughout the whole year. This recipe in particular can be done on the BBQ in the summer or oven in the winter (or if you don’t have access to a bbq – oven all year long). It’s a really easy shrimp dinner recipe full of flavour and bright colours. I will warn you the prep time of the veggies is a little bit longer so I recommend this for a Friday night or weeknight when things aren’t super crazy. Get the recipe below!

Here is what you will need:

1 red shepherd pepper
1 yellow shepherd pepper ( you could also go with bell peppers but I like the sweetness of these!)
1 small white or yellow onion
1 package of cherry tomatoes
12-15 shrimp (or more)
5 tablespoons olive oil
salt & pepper

First pre heat the oven to 400. Next, slice the peppers really thin. The onions can be thin to medium. Lay this all out in a baking dish and drizzle with 3 tablespoons of olive oil. Sprinkle some salt and pepper over top. Once your oven is ready, pop the peppers in for 10 minutes. They take longer then the tomatoes and shrimp so they need some loving in the oven first!

While you wait for the peppers to cook slice the cherry tomatoes in half.

After 10 minutes in the oven, add the tomatoes to the pepper onion mixture, mix around and then pop back in the oven for 10 minutes.

Pull the veggie mixture out and stir around, the tomatoes will start to create a sauce. Finally you are ready for the shrimp. Lay on top of the pepper, tomato, onion mixture, add the remaining olive oil and pop back in the oven for 4 minutes. Flip the shrimp. Back in the oven for another 4 minutes (or until shrimp is fully pink).

Pull it out of the oven and serve! This dish is fabulous over pasta, spaghetti squash, rice or on it’s own! You can also try making it with my tomato sauce as an alternative for fresh tomatoes.

Best news is that this is the perfect leftover dish, the flavours continue to blend together and you’ll have a little fiesta at lunch NOMS!
