Prosciutto & Phyllo Wrapped Asparagus

If you haven’t noticed I kind of have a thing for appetizers. I love making them, snacking on them and of course sharing them with others! During the holidays I’m the first to call dibs on bringing an appetizer to whatever potluck, family gathering or event I’m attending. I find it way easier (and enjoyable!) to make an epic charcuterie/grazing board or big batch of finger foods than making a main dish for a group of people.

But I also love adding to my roster. Recently I made these prosciutto, phyllo wrapped asparagus and boy were they a hit! Not to mention ridiculously easy to make. Give them a try for your next holidays gathering and let me know how fast the plate clears!

Ingredients:
- 1 bunch of asparagus
- 1 package of frozen phyllo pastry (the one that comes with two long rectangles)
- 100 grams of prosciutto thinly sliced
- 1 egg or Incredible Spread’Em Garlic Spread
Dethaw the phyllo pastry. Preheat oven to 450F. Wash the asparagus and then cut the ends off. Slice the prosciutto into thin strips. Once the phyllo is unthawed, cut it into thin strips length wise and then cut those strips in half. You can test out making one first before cutting the full pastry so you know you have the right size and then cut the rest accordingly.

To assemble, take an asparagus spear, wrap it in one slice of prosciutto and then wrap the phyllo pastry around the prosciutto. Start at the bottom of the spear and wrap upwards so that it covers majority of the spear.
Before putting them in the oven brush either a whisked egg OR (because I just bought some at the one of a kind show) melted Incredible spread ems garlic spread on all sides of the spear. This helps it get nice and crispy!
Bake in the oven for 10 minutes or until golden and crispy.
