Homemade Peanut Butter Cups
I must warn you once you make these there is no going back! I actually not prefer my homemade peanut butter cups to the real deal. (Sorry Reese’s!) I think its because I use dark chocolate and natural peanut butter which means they are lot less sweet. But make no mistake they will still satisfy your sweet tooth!
These tasty morsels are perfect to make for any holiday or occasion. I love bringing them to dinner parties because I feel like they are more out-of-the-box than typical desserts people think to bring to gatherings.
Ingredients for homemade peanut butter cups:
2/3 cup natural drippy peanut butter (just peanuts & salt)
1 tablespoon honey (or pure maple syrup)
1-2 tablespoons of coconut flour
3.5 ounces 72% dark chocolate or milk chocolate
coarse sea salt, for sprinkling on it
24 mini candy/cupcake cups (bulk barn or most grocery stores sell them or good ol’ Amazon)
How to make homemade peanut butter cups
Combine peanut butter, honey and coconut flour in a bowl. Mix until a smooth consistency. Should get pretty thick like a cookie dough batter. Depending on how runny your peanut butter is, you pay need to add more coconut flour.
Next, melt the chocolate. I usually boil a pot of water and then melt the chocolate in a smaller pot by holding it in the boiling water pot. Continuously stir it until it is fully melted.
Lay out the cups. Scoop in a layer of melted dark chocolate into each cup (about half way). Then squeeze in a dollop of peanut butter mixture. If using the Ziploc bag cut a small hole in one corner. Top it off with another layer of dark chocolate. Sprinkle with sea salt.
Let sit in the fridge or freezer to set. And that’s it!
