Friday Night Pasta

Happy Valentine’s Day friends! For me, this holiday is all about celebrating with the people and food you love. Something about my Valentine, that you may not know, is that he also loves to cook as much as me. Since the beginning of our relationship, we’ve always enjoyed making delicious food together. We recently had the chance to share the story behind one of our favorite dishes to cook together with The Chef and The Dish. We call it Friday Night Pasta. Ingredients for Friday Night Pasta

fresh pappardelle pasta -enough for 4 servings (fettuccine also works – whatever you choose buy it fresh!)
1 fresh jalapeño
2 handfuls fresh spinach
6 slices of bacon
½ teaspoon minced garlic
1-2 cups of roughly chopped mushrooms (I like using a variety – button, cremini, shiitake)
jar of store bought Alfredo sauce (I like President’s Choice Alfredo or Classico)

How to make Friday Night Pasta

Start by boiling water for the pasta, if you by it fresh, it only needs to be cooked for about 2-3 minutes, so you can throw the pasta in the water when the sauce is just about done. If don’t buy fresh, just follow the instructions on the package.

To make the sauce, first you need to cook the bacon. Make them in full strips and then once cooked, roughly chop three of the slices – set the other 3 slices aside for garnish. Pour almost all of the bacon fat out of the pan, leaving some to act as a base for the sauce.

How you prepare the jalapeño will determine how spicy your pasta will be. If you are daring, and like it super hot, you can leave in the seeds. While we love a good kick, I still like to feel my mouth after eating – so we take out almost all of the seeds. Then dice the jalapeños into small pieces.

Heat up your saucepan with the bacon fat and add the mushrooms, spinach and jalapeños. Sautee for about 2-3 minutes. Add in the garlic, Alfredo sauce and roughly chopped bacon. Simmer the sauce for 7-8 minutes, letting all the flavours come together. While letting the sauce simmer, throw the fresh pasta into the boiling water. Once it is ready, strain the pasta and throw it in with the sauce. Toss the pasta to make sure it is all tangled up in the spicy Alfredo sauce.

Serve it on a plate or bowl and garnish with remaining bacon. Serve immediately and enjoy this swoon-worthy pasta with your valentine any day of the year!
