Fall Inspired Appetizer: Avocado & Shrimp Sweet Potato Bites
To me, fall is such a cozy season. The weather starts to get colder so staying in for dinner parties is something I gravitate towards! I think Thanksgiving really kicks off the season off the season of fall and if you saw my post for the holiday you got a taste of my No Brainer Cheese Ball Appetizer recipe. This got me thinking about other appys I love to make that are perfect for the season. May I present to you.. avocado, shrimp sweet potato bites. The bright colours perfectly reflect the fall season and while the ingredients are an unexpected combination – they definitely deliver in flavour.

I was initially inspired to make this after seeing an image of it on Instagram. I knew I had to try it in the kitchen (and in my belly)! I used Joyful Healthy Eats version of this recipe to guide me but made a few tweaks along the way.
There are three parts to making this appetizer: The guac, the shrimp & the sweet potatoes.
Part 1: How to make guacamole
juice of half a lime
1 sprig of green onion
salt & pepper
Slice avocado in half, remove pit. Spoon out the avocado into a bowl. Dice the tomato and green onion in small pieces and mix into bowl. Mash all ingredients together. Add lime juice and salt and pepper. Mash more. Let sit aside.
Part 2: How to prep the shrimp
10-12 raw shrimp
2 tablespoons olive oil
1/2 lime juice
chipotle chili powder
Peel shrimp if needed, toss in Ziploc bag along with other ingredients. Let sit for 10-15 minutes while you prepare other ingredients. When you are ready, cook on the BBQ, in the oven or fry on the stove. Whatever option is most accessible to you. I personally like them grilled on the BBQ the best, but any option will work!
Part 3: How to prep the sweet potato
1-2 sweet potatoes (either 1 large or 2 small)
3-4 tablespoons olive oil
salt & pepper
Peel sweet potatoes, slice into pieces about 1/2 inch thick. Pour olive oil salt and pepper into a bowl. You can either prepare these on the BBQ (takes less than 10 minutes) or in the oven (about 10 minutes on 350). Before cooking them, brush the sweet potatoes slices with the olive oil, salt and pepper mixture. Make sure they are fully cooked through.
How to assemble the avocado & shrimp sweet potato bites
Lay the sweet potato slices on a serving tray. Top each slice with a scoop of guacamole. Top each slice with a shrimp! And devour 🙂
