Crispy Beef & Tofu with Noodles
It is no secret that Jamie Oliver is one of my favorite celeb chefs. I love the versatility in his recipes and cookbooks for that matter. I particularly love his Super Foods cookbook because of all the stories he tells about discovering the ingredients in the recipes. I’ve tried a few recipes from this cookbook but the crispy beef is definitely a favorite! I made a few tweaks to the recipe as I recently discovered that I like tofu – especially to add to asian dishes. It seems to soak up asian flavors well. Check out the recipe below!
Ingredients for crispy beef & tofu with noodles
1 tablespoon unsalted cashews
1 block super firm tofu
2 cloves of garlic (minced)
1 teaspoon minced ginger
5 teaspoons sesame oil
2 star anise
200 g lean ground beef
3 teaspoons runny honey
3 teaspoons low-salt soy sauce
sriracha (depends on your spice preference)
juice of 2 limes
150 g brown rice noodles
2 green onions
handful of mixed greens per plate (whatever your preference)
How to make crispy beef & tofu with noodles:
Preheat oven to 400F. Chop tofu into square pieces. Toss in a ziploc bag with half the amount of soya sauce and honey, 1/3 amount of sesame oil + teaspoon of sriracha (more or less depending on your spice preference), pinch of minced garlic & ginger. Ideally you want to marinade the tofu in this mixture for about 20-30 minutes. So try to do it beforehand or just prep all of your other ingredients while it sits. After it marinates, pop in the oven for 20-30 mins (until it gets brown & crispy).
Prep noodles & cashews. Noodles: cook according to the package. Cashews: crush into small pieces & lightly toast in frying pan. Set both aside for use later.
Now time for the crispy beef. Put 1 tablespoon of sesame oil and the star anise into the frying pan on a medium-high heat. I had never used star anise before this dish but boy do I love it now!!! Definitely adds a bold flavor. Add the ground beef, and while breaking it apart, add half of the garlic, ginger and honey. Stir-fry for 5 minutes to crisp up and get golden brown. Once the beef is cooked, add the baked tofu.
Set the beef/tofu mixture aside and lastly create the dressing. Mix the cashews, remaining garlic and ginger, soy sauce, sesame oil, honey and lime juice in a bowl and stir.
Start with your mixed greens, top with noodles & beef/tofu mixture. Roughly chop green onions over top. Serve with dressing on the side or drizzled over. Feel free to add more sriracha to serve as well.
