Bean Medley Salad

As I said on Instagram, 4 words to describe this recipe: easy, peasy, lemon squeazy! This is by far one of my favorite go to salads to make. It is perfect for lunch or to serve with dinner as a side. I love the flavors and the beans pack all the protein you need. It only requires 4 key ingredients BUT you can definitely add other ingredients to mix it up. I’ll share my suggestions below but first here’s how to make my bean medley salad.
Ingredients for bean medley salad:
1 can of bean medley (literally comes as a mixture & includes a combo of chick peas, kidney beans and small white beans – if you can’t find this you can buy cans of various beans and mix them yourself)
juice of half a lemon
2 sprigs of green onion
olive oil
salt & pepper
How to make bean medley salad:
Drain the can of beans in a strainer and rinse them under water. Toss into a bowl with the lemon juice, drizzle some olive oil and add salt & pepper. I use scissors to roughly chop the green onion into small pieces. Mix them in & serve! I told you it was easy, peasy, lemon squeezy!
What other ingredients can you incorporate into this salad?
Cilantro is an optional ingredient for this salad. I think it adds a nice kick of flavor but I know that the flavor profile isn’t everyone’s favorite.
I recently tried adding mixed greens and baked sweet potato and my-oh-my did this ever take it to the next level! The flavors went so well together and the sweet potato makes it a bit more filling. If you are having guests over you can make a large batch on a serving dish and create a beautiful spread.
You can also try adding the following ingredients:
avocado
black beans
cucumber
red pepper
