The warm weather recently made an appearance in Toronto and hopefully it will be around for good soon! Which means summer BBQs, parties and gatherings galore. And what better to bring to a summer gathering than an scrumptious appetizer. I love ALL things snacks and appetizers (pretty much my weakness) but lucky for you that means I have a ton of recipes to help you in this category.

I had a ton of requests for these baked ravioli bites when I made them a couple weeks ago so I figured it was time to share the love!

These are incredibly easy to make, yet turn out super gourmet and are the perfect finger food for a party. Baking them also makes them a little lighter than deep frying them in oil.

The marinara dipping sauce is just as easy to make – screw the store bought stuff and impress your friends and family with a homemade version!

To make these tasty morsels you’ll need a package of fresh ravioli. I chose ricotta and spinach stuffed ravioli but feel free to use any kind or even mix it up.

The key to the perfect crunch is using breadcrumbs. I first tried these with Panko breadcrumbs but found they didn’t stick as well to the ravioli.

You can either buy Italian spiced breadcrumbs or buy plain and add some italian spices (oregano, dried basil & parmesan cheese).

To prepare the ravioli, crack an egg in a bowl and whisk and prep your breadcrumb mixture in another bowl.

Line a baking sheet with parchment paper and preheat oven to 400F. Dip the ravioli in the egg then the breadcrumb mixture and place on baking sheet.

Once the oven is heated, place the bites in the oven for 15-20 until crispy, golden brown.

While they are baking, prep your marinara sauce. You can also make it in advance to let the sauce simmer longer.

Start by heating up a saucepan, add olive oil and garlic. Add a can of crushed tomatoes, fresh basil. 2 tablespoons of tomato paste, salt, pepper and oregano. Bring to a boil then let simmer on low for 20-30 mins or longer if time permits.

Serve the ravioli fresh out of the oven with Marinara sauce on the side. If you are making them in advance just pop them in the oven for 5-8 mins to re-heat them.

  • 1 can crushed tomatoes
  • 2 tbs tomato paste
  • salt and pepper to taste
  • olive oil
  • 1 tablespoon garlic
  • handful fresh basil
