BBQing is definitely one of my favorite ways of cooking in the summer BUT I can always make an exception for a hearty plate of pasta. Especially on these rainy days we keep having. On a recent rainy evening I was craving pasta but couldn’t decide between recreating the Cacio e Pepe I learned during my recent cooking class with a chef from Rome or something fresh and summery. Not sure how I only recently found out how much I love mangoes but DAMN better later than never! I recently was home to visit my parents and my mom was snacking on the most delicious combo – freshly chopped mango & crushed almonds. So easy but so delicious and a healthy snack might I add. This has become one of my go to snacks (thanks mom!) and my other is mango salsa. It absolutely screams summer: bright colors, zesty lime juice and refreshing fruit. YUM YUM YUM. It is no secret that Jamie Oliver is one of my favorite celeb chefs. I love the versatility in his recipes and cookbooks for that matter. I particularly love his Super Foods cookbook because of all the stories he tells about discovering the ingredients in the recipes. I’ve tried a few recipes from this cookbook but the crispy beef is definitely a favorite! I made a few tweaks to the recipe as I recently discovered that I like tofu – especially to add to asian dishes. It seems to soak up asian flavors well. Check out the recipe below!
Spring rolls are my go to whenever I am ordering Chinese food. I love those crispy little morsels! But whenever I thought about making them at home I didn’t have a deep fryer nor did I want to waste a ton of oil in a makeshift deep fryer. Luckily I did some research and learned that baked spring rolls are indeed a possibility. And holy heck they might just be the tastiest thing I’ve made since starting this blog (or at least top 10!). Spaghetti squash is the bomb diggity if you haven’t heard! It’s the perfect ingredient if you are craving pasta but looking for a lighter meal. While the cooking time may be a little daunting, it is a fairly low maintenance veggie to make. It literally does the work for you! After baking for about 40 minutes you just lightly scrape the insides with a fork and voila, spaghetti.
