Spaghetti Squash Carbonara

Have you ever tried spaghetti squash? It’s a great swap for pasta and goes with a variety of different sauces. I’ve made it with pesto, bolognese, regular tomato sauce and for this recipe, carbonara! Carbonara is definitely one of my favorite kinds of pasta but is known to be super rich. I like to lighten up the recipe by eliminating the cream, adding veggies and of course using the spaghetti squash vs. pasta. With fall being the perfect time to get your squash on, why not try this recipe? I also included a vegan-friendly spaghetti squash at the end!

Better Breakfast Series: 3 Ingredient Pancakes

This is my second recipe of my better breakfast series inspired by Women’s Health magazine! You can catch up on the first one here if you missed it. But for now onto breaky #2.

Who doesn’t love a pancake breakfast ?! But sometimes they can be super indulgent and you don’t feel like doing a whole lot after! Lucky for you this recipe is gluten-free,  only has 3 ingredients and won’t leave you feeling sluggish! I love making them on a Sunday morning OR making them during the week at night and toasting them in the morning before work. Best part is you can top them with whatever fresh fruit you have on hand and I highly recommend some kind of nut butter – almond and cashew butter are my fave!

Chicken Fried Cauliflower Rice

Cauliflower has been all the rage lately making its way into dishes as a substitute for carbs. I’m all for experiments and recently took a vegan cooking class that highlighted Canadian produce in a variety of recipes. I left with a bag full of veggies and new recipe creations running through my head.

Aside from Italian cuisine being a favorite in my kitchen I also love trying Asian and Chinese flavors like this Asian Sesame Salmon or Rice Noodle Bowls. Chicken Fried Rice is always on the top of my Chinese take-out order so recreating this classic in my kitchen was a no-brainer. BUT with produce on my mind I wanted to try it two ways. One with traditional rice and one with cauliflower ‘rice’. The results: find out below!
