This pineapple stuffed with cauliflower chicken fried rice was a huge hit on my Instagram so I figured I had to get it on the blog for you ASAP. I’ve made ‘chicken fried’ cauliflower rice before, but this time I added a couple of new ingredients AND of course used pineapple as the bowl, because why not?!
Pineapple is one of my go to fruits in the summer but let’s face it they are a pain in the behind to cut up. I figured using it as a bowl would be the least amount of work :). I cut out the inside and used some for the rice and the rest for snacks the next day.
Ingredients to make pineapple stuffed with cauliflower fried rice:
one pineapple cut in half
one head of cauliflower shredded (using cheese grater)
one red pepper
one yellow pepper
three sprigs of green onion
1 teaspoon minced garlic
1 teaspoon minced ginger
1 pound of shrimp
2 to 3 tablespoons of sesame oil
2 to 3 tablespoons of soy sauce
sriracha if you like it spicy.
Side note, as a short cut for the cauliflower, you can pick up pre-diced cauliflower from grocery stores (saves a ton of time) I grabbed it from Loblaws.
How to make pineapple stuffed with cauliflower fried rice:
First cut the pineapple and a half. Then cut the outside edge of each half so that your bowls have a flat surface. To get out the inside, I cut a rectangle in each half and then used a spoon to maneuver it out. Dice a half cup of pineapple to use in the rice, the rest can be saved for snacking.
Next I fried the shrimp separately in a teaspoon of sesame oil, a teaspoon of soy sauce, a pinch of minced garlic and a pinch of minced ginger. Once cooked set it aside. In the same pan, sautee the remaining veggies including the Cauliflower rice. Add in the remaining sesame oil, soya sauce, garlic and ginger (Sriracha if you like heat). Roughly chop the cooked shrimp into small pieces leaving a few for garnishing. Scoop the fried rice into the pineapple halves and serve!
