If you are looking for an easy summer lunch or dinner, you’ve come to the right place. These chicken salad lettuce wraps are super low maintenance and easy to whip together for a healthy, light meal. I either make it with leftover bbq chicken breast or if I’m lazy (hey we all have our days), I’ll grab a rotisserie chicken from the grocery store.
Ingredients for chicken salad lettuce wraps:
2 cups shredded chicken (see options below)
1 tablespoon plain greek yogurt (or mayo)
salt and pepper
3 sprigs of green onion diced
2 stalks of celery diced
1 red pepper diced
juice of half a lemon
teaspoon fresh dill (optional)
1 avocado thinly sliced (for garnish)
4-6 romaine lettuce leafs (for the wraps)
chipotle tabasco (optional)
You have a couple options for the chicken.
First is to grill chicken breasts, I recommend using a bbq sauce or some Montreal Steak Spice.
Second is grabbing a whole marinated chicken from the grocery store (like I did here) and grilling it on the BBQ. Again go with a BBQ flavored marinade or Portuguese.
Finally, if you don’t have time to grill you can just buy an already cooked rotisserie chicken from the grocery store.
How to make chicken salad lettuce wraps:
Combine all of the ingredients listed above in a bowl except for the last 3. Use a fork to mix it all together. I like to do a little taste test to see if any extra ingredients need to be added. It is a pretty flexible recipe so you can add more lemon juice, veggies, salt and pepper. When the mixture is just right scoop the chicken salad into the romaine lettuce leafs, top with avocado and chipotle Tabasco.
If you are up for trying different combinations I recommend trying red grapes, granny smith apple and walnuts. Test it out and see what you like! Either way I am sure you will be loving them all summer long.
