Not sure how I only recently found out how much I love mangoes but DAMN better later than never! I recently was home to visit my parents and my mom was snacking on the most delicious combo – freshly chopped mango & crushed almonds. So easy but so delicious and a healthy snack might I add. This has become one of my go to snacks (thanks mom!) and my other is mango salsa. It absolutely screams summer: bright colors, zesty lime juice and refreshing fruit. YUM YUM YUM. I think I may of found my favorite snack of the summer. Shishito peppers! They are quickly becoming the new cauliflower – making there way onto menus all over restaurants in Toronto. I made them for the first time this weekend for a girls getaway up north. Food is always a major priority for our girls weekends (as it should be). Usually our menu combines our go-to favorites (aka cheese ball) and trying out new recipes. This weekend we were eager to try shishito peppers on the BBQ. I’ve always thought that having a Vegan diet would be impossible. Growing up, meat was always a huge part of my everyday meals. And up until last week I really thought Vegans were limited to boring old salads. This recipe for protein bars was totally new for me as I generally don’t consider myself a baker or treat maker. Mostly because it seems to be more of a science (you need exact amounts of ingredients) whereas I like to experiment and throw together flavours I think will work! BUT I have great news for you – these are healthy, full of protein, require NO BAKING and there is room to play around with ingredients. OH and the best part they taste like sweet treat! I’m in 🙂
