Let’s get real. I could never deny anything coated in buffalo sauce! So when I came across these buffalo tofu bites I had to give them a try. While I do eat meat I am always open to trying new ways to get in some protein. It is always great to options in my opinion. It took me a while to try out a tofu recipe but I have no regrets – especially with these buffalo tofu bites!! Give them a try I think even the tofu nay-sayers wouldn’t say no!
Ingredients for buffalo tofu bites:
block of extra firm tofu
1 cup Frank’s Red Hot Buffalo Sauce
1/4 cup vegetable broth
1 teaspoon minced garlic
3 tablespoons of corn starch or whole wheat flower
1-2 tablespoons of coconut oil
green onion (for garnishing)
sesame seeds (for garnishing)
Ingredients for Tzatziki:
1 cup plain greek yogurt ( I use lactose free)
juice of half a lemon
dash of salt and pepper
diced 3-4 sprigs of chives or green onion
1/2-1 teaspoon of minced garlic
dash of garlic salt (optional)
How to make Tofu Buffalo Bites:
Take tofu out of package and remove as much excess liquid as possible by compressing between two sheets of paper towel and putting something heavy on top. Do this for at least twenty minutes.
Next dice the tofu into bite site squares and toss into a ziplock bag with the vegetable broth, garlic and 4 tablespoons of buffalo sauce. Let marinade for at least 30 minutes – if possible, let it sit overnight.
When you are ready to make the tofu bites, put the flour (or corn starch) on a plate and toss the tofu bites to coat with flour. Preheat the oven to 350 F. Next heat up a pan and add the coconut oil when the pan is hot. Fry the tofu bites in batches so each side can get crispy (1-2 mins per side). Once crispy toss in a bowl with the remaining buffalo sauce and then into the oven to finish off for about 8 minutes. You can end the oven time on broil to get the bites extra crispy.
Plate the bites on a large dish, top with green onion and sesame seeds and serve with Tzatziki.
How to make Tzatziki:
This one is super simple so I’m pretty sure you won’t mess it up :). Combine all ingredients listed above in a bowl and mix with a fork to combine all ingredients.
