Yes you read that right breakfast pizza! I made this for my family on thanksgiving morning and it was a HUGE hit. (You can find out what else I made for this food-filled holiday here). It is fairly easy to make, just requires a little time in the oven. What I love about this dish is that you can totally play around with the ingredients and even make different kinds of pizzas if you are entertaining a bigger group. OH and the fact that it can serve as lunch or dinner to is a huge plus!

Let’s not waste any time, here is how to make this scrumptious breakfast creation:

Ingredients for breakfast pizza:

1 sheet of puff pastry per pizza ( I buy the frozen kind that you just defrost and unwrap into a rectangular sheet – super convenient – highly recommend it!)
3 eggs per pizza
2 tbs butter melted OR one whisked egg (this is to brush pastry)
5-6 slices of bacon
3 sprigs green onion
2 tbs julienned sun dried tomatoes
handful mozzarella cheese shredded (you can also try goat cheese, gruyere, cheddar or brie)

How to make breakfast pizza:

Preheat oven to 400F. In the meantime fry bacon in pan until almost cooked. Remove from pan, chop roughly into small pieces. Place in bowl, set aside.

Defrost puff pastry, create crust along each side by folding the edges. You want it thick enough to create a wall to hold in the other ingredients. Brush it lightly with butter OR whisked egg. Bake in oven for 8-10 minutes.

While it is baking, dice green onion into small pieces and pour into bowl with bacon. Shred the cheese of your choice and add it into to bowl along with sun dried tomatoes. Stir the mixture together.

Remove the puff pastry from oven after 8-10 minutes. Leave oven on. Crack three eggs into the middle of the puff pastry. Sprinkle with salt and pepper. Pour the bacon, onion and cheese mixture onto the egg white area so that you don’t break the yolk.

Place the pizza back into the oven for another 10-15 minutes until the puff pastry and eggs whites are fully cooked (the yolk can be runny or hard – up to you!)

Remove from the oven, let sit for 3 minutes to cool. Slice and serve!
