Better Breakfast Series: Breakfast Quesadillas

This week I’m thinking outside the (breakfast box) to bring you some not so traditional breakfast recipes. What I love about both is that while you can certainly make them in the morning you can also easily enjoy them for lunch or even dinner.
First I’m sharing my recipe for breakfast quesadillas (yes that’s a thing!).
I made these for a girls weekend up north and they were a huge hit. They make for easy finger food for breaky and are super tasty. Here’s what you need to make them.
Ingredients for Breakfast Quesadillas
This will make 8 triangle portions
4 corn tortillas (I use small) but you could use the large ones as well to make bigger portions.
1/2 pack of bacon
1/4 cup milk
1 cup shredded cheese
1 avocado (to top)
salsa (either homemade or store bought)
Start by cooking the bacon. Once its ready set aside. Crack the eggs into a bowl and add milk. Whisk the eggs until a smooth consistency. Heat up a frying pan and add oil. Next cook your eggs as if you are making omelettes. I like to make 3-4 thin omelettes. Make sure they are thin to fit in the corn tortillas.
After the eggs and bacon are ready set them aside but leave the frying pan on medium. To prepare the quesadillas, lay a corn tortilla in the frying pan, place some shredded cheese on one half and lay an omelette on the cheese. Cut the bacon pieces in half and put 2-3 slices on the egg. Top it with another layer of cheese and then fold the other side of the tortilla on top. Let it sit for 2 minutes so it gets toasty brown. Flip and do the same.
Repeat these steps for the rest of the corn tortillas. Then once they are all ready slice in half and serve on a dish with a side of avocado and salsa. Dive into these breaky quesadillas with a dollop of salsa and avocado.
