womens health better breakfast

This is the third recipe in my Better Breakfast series (get my other recipes in series at the bottom) inspired by the one and only Women’s Health Magazine September food challenge. This week is all about avocado and eggs! When I went to share the recipe pictured above I realized I combine avocado and eggs A LOT for breaky – they just go together so well flavour wise plus you get a healthy source of fat & protein.

This week I’m sharing not one, but two better breakfasts featuring avocado & eggs.

The first is the classic scrambled eggs topped with avo and sriracha. This recipe is seriously so easy it can totally be made before work in the morning. It takes less than 7 minutes I promise, even less time if you prepare the scrambled egg mixture the night before! I never understand when people tell me they don’t have time in the morning for breaky when this takes no time at all! Nourish yourself and your day will be so much better 🙂 – at least that is the way I operate!

Ingredients for fluffy scrambled eggs:

2-3 eggs
3 tablespoons milk
salt & pepper
1 teaspoon finely shredded cheese

How to make them:

Crack the eggs into a bowl and whisk, add milk and whisk again. You want a smooth, consistent mixture. Add salt & pepper and mix some more – you don’t even need a whisk – I always make them with a fork.

Next heat up your frying pan, once hot add a little bit of olive oil then turn the burner down to low-medium before adding in your scrambled egg mix. As it starts cooking add in your shredded cheese (I use the finer side of the shredder – I find it mixes better in the the eggs + makes them fluffier). Once you add the cheese start stirring the eggs into a scrambled mix – you really can’t mess it up!

Shouldn’t take longer than 3-4 minutes. In between stirs you can slice your avocado into thin pieces. When the eggs are cooked, serve them on a plate OR put them in a ziploc container to take to work! Regardless top with avo & sriracha AND done!

Easy enough right? Okay onto the next recipe which could potentially be easier – is that possible!

What you need:

1 egg
1 tomato
1/2 avocado

How to make it:

Dice your tomato into small square pieces and do the same for your avocado. Mix together in a bowl then plate.

Heat up a frying pan & add olive oil or coconut oil. Once hot, crack your egg in it and fry to your liking. For this dish I like sunny side up to get the runny yolk action! BUT over easy or hard works as well. HECK you can even take the scrambled egg recipe above and use it in this recipe.

Once your egg is cooked, place it over top of your tomato and avocado mixture and PRESTO another fabulous, easy, delicious & nutritious breaky in the books!
